Clairette de Die is made by the méthode ancestrale, which predates champagne by a long way: the wine is bottled before fermentation has finished and the remaining grape sugar produces the bubbles, so nothing is added at any stage. It is mostly Muscat rather than Clairette, despite the name. The result is eight percent, gently sweet and enormously aromatic, all grape, peach and orange blossom with a soft, low-pressure fizz. Serve it very cold as an aperitif, with fruit, or with a light pudding.
