The house work to a cold-chain method that allows them to avoid adding sulphites, which is unusual at this price. Soft straw yellow with a fine, persistent bead, golden apple and Williams pear on the nose with acacia and wisteria behind them, and a savoury, fresh, well-balanced palate. Serve at 8 to 10 degrees as an aperitif.
