Mas de Daumas Gassac made its name proving that the Languedoc could produce serious wine, and this is the family’s pétillant naturel: Chardonnay, bottled under a crown cap before the first fermentation has finished, so the bubble is the tail end of that single ferment rather than a second one. No dosage, barely any sulphur. White gold, with white flowers, marzipan and honeycrisp apple, then grapefruit and lemon zest. Dry, low in alcohol, and thoroughly refreshing.
