Billecart-Salmon Brut Sous Bois Blanc 75cl

Sous Bois means under wood, and that is the whole idea: this is the one Billecart-Salmon cuvée vinified entirely in oak barrels, in a house otherwise famous for cool, precise, stainless-steel restraint. Equal parts Chardonnay, Pinot Noir and Pinot Meunier, which is also unusual for them. The barrel work gives weight, texture and a gentle oxidative depth without any obvious oak flavour: baked apple, hazelnut, honey and pastry over the house’s chalky line. A champagne for the dinner table rather than the doorstep.
