Billecart-Salmon Brut Nature 75cl

Brut nature means no dosage at all: no sugar added after disgorgement, nothing to soften the edges, and consequently nowhere for a poor base wine to hide. Very few houses attempt it. Billecart-Salmon can because their cool, slow fermentation and long lees ageing produce wine with enough fruit ripeness to stand alone. Bone dry and taut, with green apple, lemon, oyster shell and a chalky, mineral finish, the mousse very fine. Superb with oysters, sushi or anything raw from the sea. Serve at 8-10C, in a proper glass.
