Oliver Viticultors Cava Brut Nature 11.5%vol

Cava is made the same way as champagne, with a second fermentation in the bottle, from Catalan grapes: Macabeo, Xarel·lo and Parellada. Brut nature means no sugar is added at disgorgement at all, so the wine tastes of the fruit and the lees rather than the dosage, and it is much the best way to buy cava. Oliver Viticultors farm organically in the Penedès. Green apple, lemon, almond, bread dough and a bone dry finish. Serve properly cold at 7-8C, with olives, jamón or fried fish.
