The Signature 1996 Cab Shiraz

Yalumba have made The Signature since 1962 and dedicate every vintage to someone who has contributed to the company, whose signature is reproduced on the label. It is a Barossa blend of Cabernet Sauvignon and Shiraz, the classic Australian pairing, aged in a mix of French and American oak. Thirty years on, the 1996 will be fully tertiary: dried blackcurrant, leather, cedar, dark chocolate, eucalypt and earth, with tannin long since resolved. Decant gently off any sediment and serve at 16-17C with red meat.
