Oliver Viticultors Spontani Rosat – Sumoll Pet Nat 10%vol 75cl

Sumoll is a Catalan red grape that was nearly grubbed up entirely in the twentieth century because it ripens late and gives thin colour, and it has been rescued by exactly the sort of grower who makes pét-nat: pale, high in acid and full of character. Bottled before fermentation finished, so the fizz is natural and the wine is cloudy. Redcurrant, wild strawberry, citrus and a dry, savoury finish at ten percent. Serve properly cold at 8C, open it carefully, and drink it young.
