Oliver Viticultors Cava Brut Nature Rose 11.5%vol

Cava is made by the same method as champagne, with a second fermentation in the bottle, and brut nature means no sugar is added after disgorgement at all. That is a demanding choice for a rosé, because there is nothing to round off the edges. This one is bone dry, pale coral, with wild strawberry, redcurrant, a little bread crust from the lees and a fine persistent mousse. Only 11.5 percent. Serve it properly cold, at 6-8C, as an aperitif, or with charcuterie, jamón or grilled prawns.
