Doorly’s XO Barbados Rum 43%vol 70cl

Doorly’s is made at Foursquare in Barbados, where Richard Seale has campaigned for years against the sugar and colouring that get added to a great deal of the rum on the shelves. The XO is aged first in ex-bourbon barrels and then finished in oloroso sherry casks, which is where the dried fruit comes from, and bottled at 43 percent with nothing added. Toffee, dried apricot, banana, oak spice and a dry, clean finish. Excellent neat, and it makes an unusually good old fashioned.
