Dom Perignon Brut Vintage 2006

Named for the Benedictine cellarer at Hautvillers who did rather less to invent Champagne than the legend claims, but a very great deal to improve it. Dom Pérignon is made only in vintage years, always from Chardonnay and Pinot Noir, and always given a long spell on its lees before release. 2006 was a warm and generous year and the wine reflects it: ripe stone fruit, toasted brioche, almond and a chalky mineral line. Serve in a white wine glass.
