Champagne Jean Paul Deville Magnum Rose Sappherios 150cl

Deville are growers at Verzenay, a grand cru on the north face of the Montagne de Reims, and Pinot Noir from there has a tension that comes from ripening slowly on a cold slope. Rosé champagne of this kind takes its colour and its red fruit from the same estate’s Pinot rather than from bought-in wine. This is the magnum, which ages more slowly and pours better at a table. Pale salmon, with wild strawberry, redcurrant, brioche and a firm chalky finish. Serve at 10C, and treat it as a wine, not a novelty.
