Deutz is a Champagne house at Aÿ, founded in 1838, and Brut Classic is their non-vintage flagship: a Pinot Noir and Chardonnay blend aged longer than many NV Champagnes. Brioche, citrus, red apple, a chalky minerality and a clean, precise finish. Serve at 9-10C in a white wine glass. Serious Champagne from a house that has never shouted as loud as the big names, and is all the better for it.
