Billecart-Salmon Brut Blanc De Blancs 75cl

Billecart-Salmon at Mareuil-sur-Aÿ have been family-owned since 1818 and are known for a cool, slow fermentation that keeps the wines delicate where others go for weight. Blanc de blancs means Chardonnay only, here from grand cru villages on the Côte des Blancs. It is the most precise wine in their range: lemon, white flowers, almond, a little brioche from the lees, and a long, fine, chalky finish with very little dosage to soften it. Serve at 10C. Very good with oysters or a plain roast chicken.
